Mango & Mushroom Stuffed Bell Peppers

Ingredients

 400 g organic button mushrooms

 1 mango

 30-40 g coriander

 1 garlic clove

 2 tablespoons olive oil

 1 teaspoon salt

 1/2 cup shelled hemp seeds

 finely sliced mushrooms

 love 

 

Directions

Put mango, coriander, garlic, olive oil and salt into a blender and blend on low speed until it is a thick purée. Pour over the mushrooms and let them marinate for 20-30 minutes.

Add the hemp seeds to the mango purée or you can sprinkle them over at the end.

Chop the peppers in half and put the mango mushroom stuffing into the peppers. I like to serve this with any green salad.
