Tomato & Carrot Soup


 500 g carrots

 500 g ripe cherry tomatoes

 1 apple

 2 garlic cloves

 6 tablespoons olive oil

 1 teaspoon salt 

 fresh herbs of choice, e.g.  parsley, coriander, thyme, oregano, basil



Put everything except the fresh herbs into a blender. It's often good to start processing the tomatoes and allow them to become a smooth liquid before the other ingredients are added. 

Once smooth, add the herbs and blend for a few seconds. Pour into bowls and decorate with olive oil and maybe fresh herbs as garnish.
