Base:
7-8 big soft dates
½ cup desiccated coconut
½ cup Macadamia nuts

Filling:
2 cups Macadamia nuts (best to soak them for 4-8 hours first)
¼ cup coconut oil
½ cup water
1 lime - juice + rind
½ teaspoon liquid Stevia (I prefer vanilla flavour)

Simply make the base by putting all the ingredients in a food processor and mix until the mixture sticks together when pressed between two fingers. Then divide the dough equally into whichever moulds you're using - you can make 6-12 tarts from this recipe, depending on how big you want to have them.
For the filling, put everything but the lime rind into a blender jar and blend until you have a thick textured cream. Add the lime rind in at the end with a spatula or spoon or you can use some of it as garnish on top, even using rind from a second lime.
Spoon the filling into the moulds and put in a freezer for 1-2 hours, to make it easy to get the tarts out of the mould. Can also be stored in a freezer for longer, as long as they're taken out 30-60 minutes before serving.
