1 cup almonds (best to soak them for 8-12 hrs and peel for a whiter ice cream)
1 cup cashews
2 cups freshly squashed orange juice
½ cup liquid sweetener of choice (coconut syrup, honey, agave syrup etc.)
1 tsp sea salt
½ tsk vanilla powder
grated rind of 1 orange
Mix everything but the orange rind in a food processor until silky smooth. Add orange rind and mix for a few more seconds. Use as mixture for ice cream makers or pour it into lolly moulds and freeze.
