2 ripe mangoes
4 medjool dates
1 tablespoon Psyllium Husk
hint of salt
¼ cup chopped coconut pieces - can use coconut flakes too
4 teaspoons cacao nibs
a few mint leaves
Peel the mangoes and cut them up in pieces small enough for the blender. Peel the orange and cut it up and remove the pits from the dates. Put the fruit in a blender jar and blend until you have a silky smooth paste. Add the psyllium husk powder and blend for a few more moments.
If you don't intend to serve it right away, this is a good time to store the paste in a fridge. Either way, just before serving, add the toppings. Enjoy!
